I would say, this is something that can be done without spending much time sweating in the kitchen. Why? The stuff gets mixed in the mixer and gets cooked in the oven!

250 gms of minced chicken/mutton/lamb,
1 tsp chilly powder,
1/2 tsp coriander powder,
1/2 tsp garam masala powder,
1 each tsp of ginger and garlic paste, 
1/4 to 1/2 a cup of chopped coriander (I tend to over-do the coriander bit, I love its fragrance!),
green chillies as per your taste, or omit it,
2 tbsps fried onions,
1 to 1-1/2 tbsps of grated cheese.

Take a bowl and put in mince chicken (or mutton or lamb), red chilly powder, coriander powder, garam masala powder, ginger-garlic paste, chopped coriander leaves, chopped green chillies (optional), fried finely chopped onions(it adds a lovely flavour to it), and grated cheddar cheese(optional). Put all this into a mixer and run it. You should not add water to grind the mix, we need it with as less moisture as possible. Add 1/2 to 1 beaten egg (depending on the moisture level, the mix should not become too runny) to it and run the mixer further. Add salt and mix again. At this point you can refrigerate the mix till you need to make it. When time to cook them, get ready the skewers. Oil your hands and take some of the mix, and bind them onto the skewer (pic 3 & 4). If the mix is not binding well and seems runny with too much moisture in it, add some breadcrumbs to it. This helps in immediately absorbing any moisture from the mix. Arrange the skewers on a baking tray, and grill them till done. You will have to drizzle a bit of oil on them. Turning them once in between is also needed.
