Sago (Sabudana) Vadas/Tapioca dumplings:)


Tapioca (Sago) and Potato Vadas... Recipe from Manjula's Kitchen:)

‎1/3 cup sabudana (sago) (tapioca), 
3 medium potatoes,
1 tsp cumin seeds,
1-2 green chillies (according to the taste),
2 tbsps finely chopped coriander leaves,
1 tsp lemon juice, salt,
oil for frying.

 
Soak the sabudana (sago) for 3 hours. Soak the sabudana in just the right amount of water, the level of water should be the same as the sabudana. Dont add too much water for soaking. Check after an hour. The water would have been absorbed and the sabudana would have increased in size. Sprinkle some more water, never add too much. Leave for 3 hours, so that the sabudana is soaked and ready for further use. Boil the potatoes. The potatoes should be JUST DONE. Not overdone. It should NOT ooze out water. Peel the boiled potatoes and grate them using a grater. Mix the sabudana, grated potaoes, cumin, green chillies finely chopped, coriander leaves, salt and lemon juice. Mix well using your hands. The mix will be ready in a dough-like consistency. Divide the dough as per you like. Smear your hands with oil and make cutlet-like shape out of them. Heat oil for frying. The oil should be VERY HOT when starting to fry the vadas. Fry 4-5 vadas in several batches. Take out onto paper towels to drain the oil. Serve with green chutney.
